The handful of Seattle's Japanese Sushi Restaurants that offer the unique Tatami environment are tied to the long history of Japanese Culture. Over a thousand years ago "Tatami" originated as a simple mat of rice straw used to provide comfort and warmth for sitting or sleeping. Eventually the make-up of these simple mats evolved to improve their softness. Tatami eventually became popular with Japanese Nobility and served as a means of displaying the high social ranking of those persons of privileged rank — as commoners sat on the bare ground instead.
Eventually Tatami became popular with the Samurai, Merchant and Craftworking Classes of Feudal Japan as their comfort and convenience were well suited to the Tea Party oriented culture of the Edo era.
By the 15th century Tatami became a permanent soft covering for the entire floor of a room. In fact "tatami" became a commonly used means of indicating the size of a room by referencing the number of 3 x 6 foot tatami it took to cover the floor of the room in question.
